The producers of Tomorrowland Festival don’t cut corners when it comes to stage sets and props. Whether it’s the towering main stage replete with strobe lights and giant animatronic faces or the mythical creatures wandering amongst the crowd, you’ll definitely feel like you’ve gone down the rabbit hole.

Why not match the whimsy of this festival with an equally delightful treat called Hedgehogs. It’s a rum buttercream concoction formed into assorted miniature animals (including hedgehogs) that invites creativity. Create your own mythical creatures and share with the rest of your festival friends!

Wanderlust California takes place in Squaw Valley, just north of Lake Tahoe. Perched atop the Sierra Nevada Mountains, the summer is characterized by dry and mild weather that lends itself to dining en plein air. As anyone who’s been to Wanderlust knows, the festival experience touches on your physical, emotional and spiritual life. One of the highlights of the physical experience is a Farm to Table Dinner, featuring a regional menu guided by Squaw Valley’s Chef Patrick.

For our recipe this week we turn to one of the pioneers of the Farm to Table movement, Alice Waters. This recipe for Avocado and Beet Salad with Citrus Vinaigrette leverages the local bounty into a refreshing and healthy dish that begs to be enjoyed outside under blue skies.

Novi Sad is probably best known for the Exit Festival, with its dance stages set amidst the amazing Petrovaradin Fortress. The rest of this city also deserves your attention. A lovely pedestrian zone in the downtown area is a relaxing way to spend an afternoon before heading over to the festival. Or head to the Štrand and lay down your towel on the banks of the Danube River.

The cuisine shares many characteristics of the Mediterranean, including Greece and Turkey. Stop at most any restaurant in Novi Sad and you’ll find a lamb dish. This recipe for Lamb Burgers with Yogurt Cucumber Sauce is a refreshing and hearty way to get ready for your night of raving.

Hideout Festival on the Island of Pag in Croatia takes full advantage of the surrounding sand and surf. You will find a dance party on the beach, on boats or poolside. The sea is the culinary star here, and not just for seafood. For centuries Pag has been a center of sea salt production, though tourism is taking over as a primary economic driver these days.

You’ll want to keep your meals fresh and light in preparation for this multi-day dance party. This Seaside Salad is best prepared ahead of time to allow the ingredients to marinate fully. Serve it cold with a bracing glass of Prošek Sherry.

Food is allocated its own programming at Roskilde Festival with food installations and workshops, as well as a number of pop-up restaurants. One of our favorite events is the FestivalGRØD, a porridge competition where your team fights to be crowned masters of porridge by a jury of esteemed chefs.

This recipe for Irish Porridge with Chestnut Honey might be your ticket to porridge royalty. Steel cut oats contrast with the raisins (soaked in whiskey) and crunch of toasted nuts. Surely you’ll disprove Oscar Wilde, who once said “only dull people are brilliant at breakfast”.
