Wanderlust California takes place in Squaw Valley, just north of Lake Tahoe. Perched atop the Sierra Nevada Mountains, the summer is characterized by dry and mild weather that lends itself to dining en plein air. As anyone who’s been to Wanderlust knows, the festival experience touches on your physical, emotional and spiritual life. One of the highlights of the physical experience is a Farm to Table Dinner, featuring a regional menu guided by Squaw Valley’s Chef Patrick.
For our recipe this week we turn to one of the pioneers of the Farm to Table movement, Alice Waters. This recipe for Avocado and Beet Salad with Citrus Vinaigrette leverages the local bounty into a refreshing and healthy dish that begs to be enjoyed outside under blue skies.
