At the MTN Bushfire Festival there’s a wonderful array of food stalls selling everything from traditional meat stews to Indian and Chinese cuisine. As the festival itself notes, “while attendees might see food simply as a necessary inconvenience between bouts of dancing, the Food Fair is an essential venue to frequent”.
Though Swaziland is a landlocked country, fish figures prominently, especially when paired with fresh ginger. Crispy Fish with Ginger-Scallion Sauce approximates what you’ll find at good restaurants in Mbabane. It’s a great way to get in the mood for Bushfire.
