One of the most anticipated performances at the 2012 San Francisco International Arts Festival is the US debut of Raices Profundas, widely regarded as one of the most authentic performing ensembles in the Cuban Yoruba tradition. Their choreographer Juan de Dios has been a major influence in conserving, documenting and maintaining Cuban cultural traditions.
Celebrate these amazing performers with Beef Empanadas with Yuca Crust. Yuca (also called cassava) has been part of the diet of inhabitants since before the arrival of the Spanish. You can fill the empanadas with the beef picadillo suggested in the recipe, but don’t be shy about experimenting with spicy chicken or turkey.
