Durham, North Carolina is host of the amazing a cappella festival SoJam, home to Duke University (where most SoJam workshops take place), the Durham Performing Arts Center, and a critical mass of great restaurants in the revitalized city center.

The area has transitioned from tobacco crops and warehouses to small-scale farming and artist lofts. Chefs have access to fresh meats and vegetables and are not shy about creating traditional Southern dishes with a twist. A great example is this recipe for Barbecued Chicken and Black Bean Burritos care of Durham pastry chef and restauranteur Karen Barker.
