This is the last year that WOMEX will be hosted in Copenhagen, so attendees need to get out their bucket list of what to do and eat before the festival moves south to Greece in 2012. On our culinary bucket list is the Flødebolle. Americans might recognize this lovely dessert as the Mallomar. According to reliable sources (okay, Wikipedia), Denmark may be the largest producer of chocolate-coated marshmallow treats, producing about 800 million every year.

We offer this recipe for Mallowmores with some trepidation; Cookstr designates the skill level for this dessert as “challenging” with good reason. That said, just watch this video and you’ll be ready to take on the challenge.
