However, if you are hankering for something uniquely Belgian after your whirlwind global tour, we highly recommend a dish created with Belgian endives. Food lore has it that a Belgian farmer accidentally discovered its tastiness in 1830 when he noticed his chicory had sprouted leaves. This recipe for Belgian Endive with Thyme lets the flavor shine through and is a wonderful accompaniment to grilled meat.
