The Ponderosa Stomp celebrates American roots music in all its manifestations: rock-n-roll, blues, jazz, country, swamp pop, and soul. All of these influences converge in New Orleans, home of the festival and the geographic center of much American music.

New Orleans is also the source of countless culinary delights that incorporate influences from all over the world into uniquely American food. This recipe for Creole-Cajun Jambalaya splits the difference between competing approaches to the dish, with the added surprise ingredient of oysters.
