Food is allocated its own programming at Roskilde Festival with food installations and workshops, as well as a number of pop-up restaurants. One of our favorite events is the FestivalGRØD, a porridge competition where your team fights to be crowned masters of porridge by a jury of esteemed chefs.

This recipe for Irish Porridge with Chestnut Honey might be your ticket to porridge royalty. Steel cut oats contrast with the raisins (soaked in whiskey) and crunch of toasted nuts. Surely you’ll disprove Oscar Wilde, who once said “only dull people are brilliant at breakfast”.

You know you are at a great festival when it has its own craft beer. Firefly Music Festival teams up with Delaware’s Dogfish Head Craft Brewery to host a craft beer bar featuring Firefly Ale, described as “a Pale Ale with English Marriss Otter barley (because the Sex Pistols invented punk rock) and American Calypso hops (because the Ramones invented punk rock)”.

Take advantage of nearby Chesapeake Bay and pair your beer with Crab Cakes, using the delicate blue crab that is a local favorite.

Isle of Wight Festival has lots of different food options, and thanks to Taste of the Wight, you’ll have no trouble exploring all the wonderful local options that are available such as asparagus, cherries, and locally made luxury ice cream from the Minghella family.

Catch, a local seafood restaurant, works hard to revitalize the fishing industry on the island and make a pretty amazing Festival Fish Finger Sandwich. For you own take on this, use this recipe for Fish and Chips. The perfect combination of crispy coating and tender fish will justify the purchase of a deep-frying basket.

What food do you think Sweden Rock Festival serves in the green room? After watching the video of Amon Amarth perform their Viking show, you might be tempted to guess they serve a side of raw beef and flagons of ale. For shame. That is stereotyping of the first order.

We think that in their down time these Swedish rockers enjoy Layered Marinated Herring Salad, served on china. They’ll wash it down with Glogg that they have lovingly prepared a day in advance and serve it in crystal goblets!

Buckeyes

Ohio, where the Nelsonville Music Festival takes place, is known as the Buckeye State for the markings of the nut of this Ohio tree which resemble the eye of a buck.

A lovely confectionary take on this is Buckeye Candy, a combination of chocolate and peanut butter that is formed into an edible version of the real thing. We think Wilco, this year’s festival headliner, would approve!
